Ingredients

For the Apples

  • 4 firm apples, such as Honeycrisp or Pink Lady
  • 1 cup cooked quinoa
  • ½ cup finely chopped walnuts
  • ¼ cup dried cranberries
  • 2 tbsp pumpkin seeds
  • 2 tbsp finely chopped fresh sage
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • ½ tsp cinnamon
  • ¼ tsp smoked paprika
  • Pinch of sea salt
  • Black pepper
  • 2 tbsp crumbled goat cheese or feta, optional

🍯 Golden Maple-Tahini Drizzle

  • 2 tbsp tahini
  • 1 tbsp maple syrup
  • 1 tbsp lemon juice
  • 1 tsp apple cider vinegar
  • 2–3 tbsp warm water
  • Pinch of cinnamon
  • Pinch of sea salt

Directions

1. Prepare the apples.
Preheat oven to 375°F. Slice off the tops of the apples and carefully scoop out the cores, leaving the bottoms intact. You want each apple to become a little bowl.

2. Make the filling.
In a bowl, combine quinoa, walnuts, cranberries, pumpkin seeds, sage, olive oil, maple syrup, cinnamon, smoked paprika, salt and pepper.

3. Stuff the apples.
Generously fill each apple with the quinoa mixture. Add a little goat cheese or feta on top, if desired.

4. Bake.
Place the stuffed apples in a baking dish and add a small splash of water to the bottom of the dish. Bake for approximately 25–30 minutes, until the apples are tender but still hold their shape.

5. Make the drizzle.
Whisk together tahini, maple syrup, lemon juice, apple cider vinegar, warm water, cinnamon and salt until smooth and creamy.

6. Finish.
Drizzle the warm stuffed apples with the maple-tahini sauce. Finish with pumpkin seeds, fresh sage and a light sprinkle of cinnamon.
